Chef Norbert Niederkofler, Executive Chef of Restaurant St Hubertus at Hotel & Spa Rosa Alpina will be participating in The White Barn Inn’s Guest Chef Program during April 16th - 20th.
Norbert Niederkofler is the Executive Chef of Hotel & Spa Rosa Alpina, located in the village of San Cassiano, Italy. With a broad background in the culinary arts, including working closely with renowned chefs throughout Europe and in the United States, Niederkofler is responsible for all dining operations at the mountain retreat, including menu creation at two star Michelin St. Hubertus and kitchen operations at the Wine Bar & Grill, FondueStuben and Limonia. He also oversees all in-room dining operations as well as private events through the Rosa Alpina Partyservice.
Niederkofler’s cooking style is light, simple and ingenious, with a measured, understated elegance that is healthy without compromising on taste and flavor. His biggest effort goes into finding the best ingredients throughout Italy and neighboring countries in order to give even more character to his cuisine.
Along with the awards for Hotel Rosa Alpina, Niederkofler has earned wide recognition for himself. In 2004, Lufthansa Sky Gourmet served dishes he’d created to its business and first-class passengers. In the spring of 2005, he participated at the World Gourmet Summit in Singapore, where he was the only invited Italian chef.
Niederkofler has also been instrumental in garnering attention for Hotel Rosa Alpina. In 2003 he published his first cookbook, St. Hubertus. Then, at his initiation, in 2004 the hotel launched the Chef’s Cup, an informal yet delectable competition among 50 Michelin-starred chefs and wine producers. A follow up Chef’s Cup in 2006 was no less a success. Nor was his second cookbook, St. Hubertus and the Flavor of the Dolomites published in 2006.
