Feature chef in the Guest Chef Series 2008 at The White Barn Inn Restaurant
Chef David Hutton, Executive Chef of The Mooo Restaurant at XV Beacon, will start off the series the weekend of March 28th through 30th.
David Hutton is Executive Chef of The Federalist at XV Beacon Hotel in Boston. He is responsible for all kitchen operations for "The Fed" – as the restaurant is known to local culinary aficionados – as well as private dining in The Wine Cellar, 24-hour in-room dining at XV Beacon, and special catering events.
Chef Hutton joined The Federalist in January 2006 after serving as Executive Chef for close to four years at the Tournament Players Club, a private country club in Boston that is owned and operated by the PGA Tour and home to the annual Deutsch Bank Championship. Indeed, Hutton opened the Tournament Players Club restaurant in April 2002. Previously, he was Executive Sous Chef for five years at Mistral, a Boston bistro specializing in Provencal French cuisine.
A native of Boston, Chef Hutton is a firm believer in the efficacy of simple yet high-quality dishes created from the best local product. He especially enjoys cooking in the spring, when the city is blooming and local farms are beginning to turn out an array of fresh herbs and produce.
Some of Hutton’s most popular items on the menu at The Federalist include Fresh Scallops straight from the local pier served in homemade lemon butter pasta; Lobster Roll and Lobster Salad from daily fish deliveries to The Fed; and of course Clam Chowder using fresh bivalves from a local New England distributor.
Of course, The Federalist will always have room for the classics – or, more precisely, the “Modern Classics,” as the restaurant’s cuisine might best be described. Signature dishes at The Fed include classic Beef Wellington, Lobster Bisque, Baked Stuffed Lobster and Kobe Steak.
Hutton is highly aware of the challenges of overseeing food preparation for The Federalist. The Fed enjoys the patronage of many of its Beacon Hill neighbors, who regularly enjoy the bar and lounge and also patronize the restaurant once or twice a week. Because of XV Beacon’s round-the-clock in-room food service, Hutton also must design offerings that can be prepared and delivered with consistently superior quality at any time of the day or night.
